The “Pepsi – Coke” challenge for restaurant booking systems

There have been hundreds if not thousands of attempts over the years to make a better restaurant booking system than the static “table and table combination” frameworks offered by all current booking systems like SevenRooms, OpenTable, NowBookIt, Quandoo, Resy, Yelp which can easily reject bookings when your restaurant is only 60% to 65% full, as they think it is 100% full.

Some of the largest companies, with the best available talent and resources have lodged patent applications as they thought they had a better solution, only to find out their “innovation” did not work. These failed attempts include:
·   Amex (2008) – “optimising the yield of a restaurant having perishable inventory”
·   OpenTable (2010) – “combinations and permutations of possible reservations available”
·   Oracle (2012) – “availability and price determination in response to a request”
·   Apple (2013) – “use a physical resource, such as a table at a restaurant”
·   Yelp (2013) – “managing reservations for a restaurant”
·   Seat Me (2013) – “If tables are unused or reservations are broken, restaurants may lose significant revenue that cannot be recouped”
·   Chowtime (2013) – “the ability to seat effectively can be crucial to the success of an establishment”
·   Flo (2017) – “a restaurant reservation and table management system that can accurately suggest where to seat patrons”.

Similarly, the 2007 PhD thesis, of now, Dr Vidotto, “Managing Restaurant Tables Using Constraint programming” (where he continues to use tables and tables combinations) did not find a solution, he merely offered recommendations for possible future research.
